ALEJANDRO ZUNO
Executive Chef

Hs more than 15 years of culinary experience in award winning restaurants throughout Mexico and Argentina as well as a seasoned Catering & Event professional with over 500 successful events to his credit and as a private chef for countless high net worth individuals.

Chef Alex began his culinary journey at age 17 working in local restaurants in Guadalajara and completed his culinary degree at Colegio Gastronomico Internacional in Guadalajara at age 22.  He has been a private chef for a number of estates and villas surrounding Puerto Vallarta, Mexico where he prepared meals and events for A-List celebrities including: Reese Weatherspoon, Pitbull, Kanye West & Kim Kardashian, the entire Kardashian Family and Kevin Huvane (Managing Partner of CAA talent agency).  Alex works with passion and high ideals as a member of the Slow Food Movement, an active promoter of local, organic and sustainable products in San Miguel and also produces organic microgreens, mushrooms and organic baby produce in a family-owned farm in Guadalajara.

MARCELA LOPEZ SANCHEZ
Sous Chef 

Borned in Mexico City, she attended the Cordon Bleu where she studied to be a chef. She was hand-picked for a yearlong internship at one the best restaurants in the world, Arzak in San Sebastian, Spain – a famed 3 Star Michelin restaurant.  She loves fusing Mexican Ingredients with Spanish and French regional cooking styles.

ANTONIO TORRES
Event Manager

Antonio is a native from San Miguel and a seasoned food & beverage professional with a penchant for providing outstanding service and building high performance teams.  With more than 12 years of hospitality experience and 500 successful events to his credit, Antonio will ensure your experience is simply World Class.

VANESSA VILLAGAS
Partner, Interior Designer & Event Planner

Vanessa was born in Guadalajara, Mexico and enjoys dual citizenship (Mexican and American) and has spent the majority of her life between Mexico and Southern California.  She speaks fluent Spanish and English.  For the past three years, she has made her home in San Miguel de Allende and is co-owner operator of the award winning ZUMO Restaurant and Casa Kali Boutique Hotel.

Vanessa holds a masters degree in Interior Design from Domus Academy in Milan, Italy and also studied architecture at the University of Guadalajara.  She is also an accomplished event designer and florist.  She comes from a family of chefs, restaurateurs and caterers and has been working events for the past 20 years as a designer, a planner and a florist throughout Mexico

STEWART HAVERLACK
Managing Partner, Food Guru, Sommelier, Certified Event and Wedding Planner, and Licensed Officiant

Stewart is a one of a kind charismatic personality, Bon Vivant and a consummate host with more than 25 years of experience in catering & events, hotels and restaurants and has personally catered more than 2,000 seamless events all over the world including over 1,000 weddings.

He has lived in multiple international destinations and has traveled extensively throughout the world (over 80 countries) always with a focus on discovering and enjoying amazing food and wine experiences.  In the early 1990’s, he opened and operated a successful fine dining restaurant and catering company in Warsaw, Poland where his clients included multiple Embassies, Political Dignitaries including Heads of State, International Executives and luminaries throughout Eastern and Western Europe.  In late 2000, he returned to the U.S. where he was the Senior Vice President of Paula LeDuc Fine Catering in San Francicso, California, one of the top catering companies in the United States where he led a team of 500 part-time and full-time employees (including 80 chefs) executing over 450 high-end events annually for A-List clients.  In 2004, with his insatiable penchant for wanderlust and adventure, Stewart relocated to Puerto Vallarta Mexico where he owned and operated two award winning chef-driven restaurant concepts:  Boca Bento and El Dorado.  One year later in 2005, he launched Puerto Vallarta’s premier catering and event company, Plush Catering & Events focusing on destination weddings for international and domestic clients from the U.S., Canada, Europe and Mexico.  He sold Plush Catering & Events in 2012, and it is still operates successfully in Puerto Vallarta and the Banderas Bay.  In 2013, Stewart purchased an exquisite Spanish Revival villa in San Miguel de Allende where he opened the award winning ZUMO Chef Action Experience restaurant, ZUMO Catering & Events and Casa Kali Boutique Hotel along with his life partner, Vanessa Villegas.  Weddings & Events that Stewart has overseen over the years have been featured in Martha Stewart Weddings, Town & County, Grace Ormond, Best Destination Weddings, the Knot.com, Special Events Magazine as well as In Style, US Weekly and OK magazines.

We start with your vision and create custom tailored menus to reflect your specific flavor profiles and give special attention to any possible food restrictions.  We use only premium, local, organic and sustainable products to create mouthwatering memorable culinary experiences.

After completing your initial menu, we offer complimentary on-site tastings on our rooftop terrace venue with breathtaking views of the colonial city center.
